For Super Speed, Swimming, etc. it says that you can run up to 2 zones in a single (quick or full) action and if you take 1 point of stress, you can run up to 4 zones in a single action.

Does this mean that I can spend 2 quick actions in my turn to move twice, take 1 point of stress and so move a total of 8 Zones?

As the core rules mention on page 85, you can choose to take two quick actions instead of a quick and full action on your turn. So yes, you can use two quick actions to use a movement power twice.

If you do that, you can use a movement power to move the number of zones in their description for each quick action. You can then take 1 point of stress to double the number of zones per quick action.

In your example, you could indeed move up to 8 zones, but you would take 2 points of stress (1 for each quick action you took while doubling the movement power's zones).
