I understand that if you use your Reaction to Evade you lose your Action in the Initiative Order if you haven't acted yet.

1. Does this mean you lose your Move as well?

2. How do you Evade the attacks of a Griffon that can attack 1d6 times? I guess you're screwed if the GM rolls a 6?

Yes, you loose your movement as well (p.43), but if you do the reaction dodging or parrying you do get some movement.

The Griffon monster attack 2 when the griffon attacks d6 times might seem dangerous and for a non-armoured PC it probably is, but do remember that armour works on each of these attacks. So a PC with a chainmail or plate armour will most likely not take that much damage if any. Also, there are heroic abilities that lets you dodge or parry multiple times.

Some monster attacks are very dangerous but some are also very weak. A monster never makes the same attack twice in a row. This is both for flavour but also to balance the monsters actions so it doesn't always do the same.
