[Demo] Convention Preparation with the TOR 2E Starter Set

I am going (likely) to be running a TOR 2E Open Table Demo Event (4 hours, up to six players) at a local TTRPG Convention on the weekend of April 7-9th, 2023. For those GMs who have already done such an event, what gaming materials, lore preparation, adventure changes, pre-gen PC sheets adjustments, Pre-Gen PC minis/tokens options, and convention specific “stuff” did you bring and/or used, that helped you run a successful demo event?

I am looking for a “One-Sheet” summary of the core rules that I can print out to new players as a starting point, in addition to printing out an excellent “Stance Map” created by Luke Stratton. Other suggestions welcomed, as I have never attempted such a feat before (I have run many one-shot/demos on Free RPG Day over the years, so I am not completely unprepared, I hope!)

Don't do the printed shire adventures, they are a good read, but in my opinion not much substance to them gamewise and underwhelming as printed.

If you want a different tone, you could make your own characters and do The Star in the Mist (core rulebook) or any of the Land Marks from Ruins of the Lost Realm?

For a convention game, showing off a journey, council, combat and skill endeavour would be good.
