Grapple Attack question

Hello everyone,
I've got a question regarding GRAPPLE and GRAPPLE ATTACK.
The rules state that no weapon can be used during grapple. Does it mean that player should drop or sheathe her weapon before doing that or just don't add dice for it?
And if she can keep it in her hands, then can she use a weapon during grapple attack?
It says that it works like PUNCH/KICK/BITE, but the rule for it states that it does not require a weapon. It does not say that you can't use one.
Now, lets imagine that player sheathed her weapon before grapple, can she unsheathe it on the ground?
To me it seems logical that player should not be required to drop her weapon while grappling and can use it while attacking, but I'm not sure if it is allowed by mechanics.
Please help me out with this one.

In my book a Grapple attack has the intention to restrict the enemy, ideally so far that the attacker gets a firm hold an control/subdue the opponent. That's IMHO not possible with a weapon and/or a shield in hand. So, yes, before a (N)PC can attempt a Grapple attack the hands have to be made free, either sheathing a weapon (Fast Action) or dropping it (which should IMHO be free). So, there are no Gear Dice as bonus.
When a Grapple attack has been successful, both hands are required to hold the opponent, so that unsheathing a weapon or taking it up again is not possible as long as the hold is maintained (Rust Brothers with extra arms might have an advantage here ;-)). With some Talents it would IMHOI possible, though, to release the opponent, draw/pick up a weapon and make an attack. But that's only my personal opinion/interpretation.

I'm asking this question because recently there was a request from a player that wanted to hold a NPC from the back and put a knife to his throat (NPC was unarmed).
Which to me seems quite possible and logical. So I'm kinda confused about what rules I should apply here. Rolling for melee without a weapon bonus seems legit, but other rules don't seem to be applicable here (IF we say that you can't use weapons during grapple).
Also, you don't really need both hands to restrict someone lying on the ground. Especially if you are armed.

Grapple and grapple attack is this game's wrestling and the idea with this is that you use your hands, yes.
