I am getting ready to run CotG soon and currently have 5 players with two more interested in playing.
For those that have run it, how do you think it would play with 7 players?

7 is doable.  Encourage them to split up in order to complete the tasks in Act II and have each battle a Neomorph/Abomination for cinematic mini-battles.  Act III might fall apart for you.  Don't assume everyone-for-themselves-type mutiny; the survivors will likely join forces, which makes things awkward if their only means of escape is limited for three.
