Do you allow for it?

I do let them know some stories about the monster with the Lore skill. Things like what the monster can do and what you can do to it might be included in those stories. How useful the skill use is depends on how many successes they got. I usually wing it on the fly and I try to be a little bit vague.

Yeah, the amount known based on the number of rolls is a great idea.

I would let them make a general lore roll for some mythical stories or what not.

Then make a talent tree like Seeing the Beast. - rank 1 allows one piece stat information per success rolled for normal beasts
rank 2 allows for one piece of stat info per success for monsters
rank 3 allows the same but for rare mythical creatures and magical beasts

I am also using the Lore skill when characters need to identify monsters or their potential abilities

Zoology?
A new stronghold feature,
Menagere:
Once you have gathered that collection of monsters this is the place to keep them safe and on display.
✥ Requirement: Zoology Talent
✥ Raw Materials: 200 wood, 400 stone, 100 iron
✥ Tools: Sledgehammer, pickaxe, saw, hammer
✥ Time: Two weeks
✥ Effect: In the MENAGERIE, valuable monsters can be safely kept. The ironclad bars have an Armor Rating 15 and can take 75 points of damage before giving in. an extra 100 iron per monster. A zoology talent R1 can care for 1 monster without it causing damage to its environment, R2 4 monsters, R3 8 monsters.
Hirelings: Zookeepers are Rare and cost 4 SP a day @ R1.
Zoology allows an Animal Handling roll for monsters, 1 success for str 2-4, 2 successes for str 5-12, 3 or more successes for 13+
Monsters with Wits are only able to be controlled by a Zoology talent R3 and may involve rare poisons to keep the monster compliant.

I personally feel adding a talent to control monsters and knowledge about them is a strange way to go. Lore is the perfect skill for knowledge. The more 6s you roll - the more you will know.

In Pathfinder a knowledge check against monsters let's you ask questions about it for every 5 success above the target number. Same could be done here.

#6
1: GM gives you some info but very vague.
2-...: you can also ask a question for every 6 you roll.
