That type of characters would fall under the archetype 'Occultist'. The name of the profession for such a character could be anything from seer, medium to mystic. You always add stress dice to skill rolls unless the rules say otherwise. Death Rolls for example is such exception.

Animal attacks are a variant of unarmed attack (crit 4, armour +3). This most often means that it will do normal damage only, no crits (bears have a higher chance of causing a crit). Not totally unrealistic. The animal attacks you until you go down and then it will kill you.
